DOES QUOIN ROCK BLANC DE BLANC 2009 TRANSCEND CAP CLASSIQUE EXPECTATIONS?
------------------------------------------
Produced from 100% Top Block Chardonnay cultivated and hand harvested in the cool climate at the Boskloof Farm in the Elim Region which is located 2 hours 30 minutes south east from Cape Town. The vinification process is conducted at the picturesque Quoin Rock Cellars perched off the R44 in Stellenbosch.
The full bunch Chardonnay is gently pressed to extract free run cuvee which goes through both natural & inoculated fermentation and matured in French Oak Barrels for 7 months. Thereafter the Base Wine is blended before Second Fermentation which strictly by Cap Classique traditional method in 2mm thick bottle with a metal cap enclosure.
The Special Cuvee matures an astonishing 8 years & 7 months (103 months) in the bottle before the bottle cap is removed to release sediment (disgorgement). This long maturation process ascertains complexity, rich flavours and full yet delicate mouthfeel.
