Eating the rainbow is only the beginning.
The phytonutrients in colorful foods interact with the ecosystem within us. Gut microbes can transform many of these plant compounds into new metabolites, while phytonutrients can also influence the composition and activity of the microbiome.
Itβs a two-way conversation: plants β microbes β us.
And because our microbiomes differ, two people can eat the same food and produce different phytochemical metabolites.
I think of this as a kind of Phyto-Fitness: cultivating the microbial ecosystem that helps us interact with the chemistry of plants.
