Quail Egg Bon-Bons 🐣
Made these 35% white chocolate bon-bons a few months back experimenting with white chocolate shell temperaments and infused cocoa butters. I managed to get a beautiful shine out of the tempered Moringa infused cocoa butter that added a subtle earthy flavour to cut down on the sweetness of the chocolate. Inside there is a fermented pineapple rum jam and boabab white chocolate ganache. A proudly South African experience!
Unfortunately I demolished all of these before I could even get any cross sectional shots but I can assure you, shells were thin 🔥🤞😌
