I made a triple batch of VIOLET JELLY! It turned out so good and is so yummy. Kinda tastes like a grape lollipop?
Violets are full of natural goodness just waiting to be used!

Most violets have edible leaves and flowers and are medicinal. The leaves especially are a traditional nutritive spring tonic, high in vitamin A & C and soluble fiber.
You can enjoy them in salads, stir fries, quiche, as jelly, and as an ingredient in wild greens pesto. When added to soups they can even be used as a healthy thickener.
Violet leaves are heart-friendly due to all the anti-oxidants and soluble fiber which helps to reduce cholesterol levels in the body (similar to oatmeal).
*Please research any new herb and be sure of your identification before ingesting any plant!
1. Pick purple violets from yard
2. Pour boiling water over flowers & seal in jar for a solid 24 hours
3. Strain flowers from water. Water will be a dark blueish
4. Add lemon juice and watch the color change to a gorgeous clear purple! *my favorite step!*
5. Add pectin and bring to a boil
6. Add sugar and return to a rolling boil for a solid minute
7. Skim and fill jars. Then seal jars for prolonged freshness
8. Enjoy!
