This delicious egg bake is so easy! Perfect for holiday brunch or potlucks. Prepare in advance if you wish, and pop in the oven before you want to serve your guests. Makes 12 single servings.

Save this for your next meal prep 👇

Ingredients (6 servings):
• 150–200g broccoli florets
• 3 large eggs
• ½ cup shredded mozzarella (low-fat if possible)
• ¼ tsp salt
• ¼ tsp black pepper
• (optional) ½ tsp garlic or garlic powder

Instructions:

1. Preheat oven to 400°F / 200°C
2. Chop broccoli into small bite-sized pieces
3. Steam for 3–5 minutes (just until slightly tender, not mushy)
4. Let it cool, then pat dry with paper towel (this step matters!)
5. In a bowl, whisk eggs with salt, pepper, and garlic
6. Add broccoli into a baking dish (lightly greased if needed)
