Happy Sunday, everyone!
Judging by the questions, comments, and a few rumors currently simmering around town, we thought it might be a good time to explain what’s happening at The Lanes.
First, a huge THANK YOU to everyone who joined us for the soft opening or stopped in over the weekend. You helped us put the new kitchen and menu through their first real test, and we truly appreciate your patience, encouragement, and feedback.
This renovation was probably the largest project we have ever undertaken at The Lanes at Light Hardware. We were closed for more than a month, and while you may not notice many visible changes from the dining room, nearly everything behind the kitchen door is new.
New equipment.
New dishes.
New ingredients.
New procedures.
New team members, including a professionally trained chef.
A month ago, our crew knew exactly where everything lived, exactly how every meal came together, and exactly how long each step took. Now, they are learning an entirely new kitchen while producing an entirely new menu.
It is a little like learning to walk again, except your shoes are an 80,000 BTU commercial salamander, and the distance between a perfectly crusted ribeye and a charcoal briquette is apparently about half a second. 🔥🥩
Our guest's experience has always been, and remains, our number one priority at The Lanes and that's why we're giving ourselves a few days of reservation-only seating for dinner before we throw wide the doors for the world to enjoy.
Knowing how many guests will be arriving and when allows us to control the flow of orders, properly prepare, and give our team time to develop that all-important kitchen muscle memory.
This is temporary, and it only applies to dinner. If you just want to come bowl or enjoy an ice-cold beverage, you can walk right in like always.
I promise, we are not becoming one of those restaurants where you need a decoder ring, a Facebook search, and a call to someone’s cousin to figure out whether they are open. Once we get through these first few days, we will return to the same business hours you've been able to count on for years.
For now, though, this is your opportunity to experience the new menu before everyone else catches on.
We’re serving thick, hand-cut Woodson County ribeyes, fresh burrata caprese salads, hearty lasagna, new appetizers, elevated entrées, and desserts, along with all of your old favorites.
We genuinely believe we have reimagined what dining can look like in Yates Center, and we cannot wait for you to experience it with us.
