Spinach Mushroom Quesadillas

TACO TUESDAY

Just kind of thinking what would be simple and tasty well go no further

4 Zero carb tortillas
1 1/2 Cup each shredded mozzarella and cheddar cheese, shredding your own cheese makes a big difference always Shred mine
8 oz mushrooms sliced
I really don't know how much spinach I used but I just got a couple handfuls
Butter and olive oil
Homemade salsa I dehydrated a couple of jalapenos and then I chomped them up a little bit and left the seeds in for a little extra hit of Heat
Sour cream

First I sprayed my Skillet with a little olive oil and then once it was heated up I had some butter and tossed my tortilla on top and brown both sides just for a few minutes each

While doing that I had my oven on 400

Once I have a tortillas ready I put cheese on all four of them tossed in the oven and out of the cheese a little bit, took him out of the oven and put the mushrooms and spinach and then I put the other tortilla on top of both of those

From there all I did was cook them in the oven for maybe six minutes and that was it and the rest is history and they were actually really delicious for an easy meal

I forgot to mention after chopping the mushrooms either put them in a skillet and cooked most of the moisture out or what I did today was tossed them in the microwave for 3 minutes and then drained to get the moisture out

CHICKEN SALAD AVOCADO

Well, just make your chicken salad how you enjoy, cut your avocado in half, take the seed out, I used an ice cream scooper and plop it on, I got a lot of prepping to do for tomorrow's meal so I decide to do something simple today and light

Whole Boneless Chicken on Da Pit

I met with Mike at Tramontes Meat and Seafood , he suggested I take a whole boneless chicken home and cook it on my green egg if you don't already know this Mike weekly give me something to try whether it be beef chicken seafood I am so appreciative to him for doing that, I dry brined it the day before, used their seasoning then got my green egg to 550° and cooked it in about 25 minutes believe it or not, it's like it locked in all of the juiciness, this is the only way I'll cook boneless chicken on the pit unless I'm stuffing it, go check out Mike at Tramontes I promise you you will not be disappointed

I was going to baste it with the butter, lemon, Worcestershire sauce and Louisiana hot sauce but I decided to use it as a dipping sauce

🌮TACO MEATBALLS🧆

TACO TUESDAY

These are delicious! And super simple to make.

Mix the following in a bowl:

1 lb ground beef
1 taco seasoning packet
1/2 cup of chop't tomatoes
1/4 cup of onions
1/4 cup of green bell peppers
1 bunch of cilantro

Make your meatballs. I got 8 good sized meatballs. Then bake at 400 for about 25 minutes. And thats it!
