Today is National Ice Cream Day and I always love boozy fruit sauces over ice cream. Here’s my recipe for cherries jubilee. 🍨 🍒

Cherries Jubilee

3 tablespoons salted butter
12 ounces of frozen cherries, thawed, or
fresh pitted cherries
1/3 cup granulated sugar
1 tablespoon cornstarch
2 tablespoons water
1/3 cherry brandy, such as Kirsch
vanilla bean ice cream, as an accompaniment

In a medium saucepan, melt butter over medium heat. After the butter has melted, stir in sugar. Cook sugar for about 1 minute. Stir in cherries. Cook for about 2 minutes. While cherries cooking, combine cornstarch and water in a small bowl. Stir in the cornstarch mixture into the saucepan. Cook until slightly thickened. Turn heat on high. Pour in the cherry brandy. Carefully remove from heat. When the flames die down, serve the sauce over the ice cream.
