My heart is absolutely breaking right now. My 7-year-old daughter Emma spent three weeks working on this swan for her school art project. Every single evening after homework, she'd sit at this kitchen table, carefully placing each pearl, adjusting every tiny rose, asking me "Mommy, do you think it's beautiful enough?"She was so excited to show her classmates. She practiced her presentation, talked about how swans represent grace and beauty, and couldn't wait to share her creation.Then she came home in tears yesterday. The other kids laughed at it. They said it looked "weird" and "too fancy." One boy even said it was "trying too hard." Peri-Peri Chicken Tray Bake with Peppers & OnionsIngredients:2 lbs (900 g) bone-in, skin-on chicken thighs (about 6)2 large bell peppers (red/yellow), sliced into strips1 large red onion, cut into thick wedges3 tbsp olive oil, dividedLemon wedges, to servePeri-Peri Marinade:3 tbsp olive oil2 tbsp lemon juice1 tbsp red wine vinegar3–4 cloves garlic, minced2 tsp smoked paprika1–2 tsp hot paprika or cayenne (to taste)1 tsp dried oregano1 tsp salt½ tsp black pepper1–2 tsp sugar or honey (balances heat)Optional: 1–2 tbsp store-bought peri-peri sauce for extra kickInstructions:Preheat oven to 425°F (220°C). Line a large sheet pan with parchment for easy cleanup.Whisk marinade ingredients in a bowl. Pat chicken dry. Add ⅔ of marinade to chicken and toss to coat (reserve the rest).
