It’s picnic season and my favorite picnic dish is pasta salad! It’s delicious, satisfying, and endlessly versatile. I’m constantly changing up my recipes to try new flavor profiles. And today I made a pasta salad inspired by a dirty martini!

The Lindsay green olives that I used didn’t have pimentos, so I thought adding some chopped red bell pepper would be a fun play on the olive theme (as well as adding some crunch)! I also added some of the olives brine to the dressing for the salad. And a cheeky martini-style garnish to finish it all off!

It turned out really good - even my husband who typically doesn’t like olives found it to be yummy!

My 16 year old best friend, Abracadabra, was recently diagnosed with inoperable cancer. While that’s not the news we had hoped for, the vet said not to count her out yet because she’s such a strong little girl! They were able to give her a bit of treatment and she’s feeling much better, but it does mean that she’ll have a tumor on her belly for the rest of her life and we need to keep it covered up.

Big, huge, enormous shoutout to for their adorable recovery suits! They come in 2 colors and she’s got both - and I wish they made even more options because we love them so much! I’ve tried other recovery suits on her and with her long, skinny shape, no other suit I’ve found fits her quite right. In this outfit she’s protected and comfy. It’s breathable cotton so it’s not stifling in the summer heat, and it cleans up really nicely (she’s a messy old lady)!

We don’t know how much time she has left, but she’ll be spending all the rest of her days rocking her Happy & Polly onesies!

We were craving baby spinach so we bought the *big* tub. How many meals does it take for 2 people to eat it all?

We did it in 4!

The first day we made turkey sandwiches and added a handful of spinach on top.

On day 2, it was too nice out to stay inside so I packed up a picnic and we ate salads, antipasti, and blackberries at the park with a view of the river.

On day 3 my husband requested salads again, but larger! I blended the spinach with some spring mix, then piled on cucumber, tomatoes, peppered turkey, cheese, and crispy onions. (Incidentally, in these 3 meals we also finished up a whole pound of sliced turkey!)

And finally on day 4 my husband made breakfast for dinner! He scrambled some eggs along with red pepper, the remainder of the spinach, and some cheese.

And now I’m immediately wanting to go get another tub! There are just so many good ways to use it! Which is your favorite?
