Buffalo Hills Ranch, LLC Located in rural Northeast Oklahoma, we raise pastured lamb, pork, and speciality breeds of poultry. We offer a lovely primitive camping experience, as well.

In addition, we also grow exceptionally sweet papershell pecans, available every other year. My wife and I decided that we were tired of living in town. Chickens started to keep us around for pure entertainment and invited guines, geese, and rabbits to watch us transform the backyard from a field of grass and weeds to a garden. We decided that the neighbors were too close and we needed space to sp

read out as the garden and chicken pen took up over half the back yard. We decided to leave our house in Missouri for a smaller home in North East Oklahoma in May of 2013. I don't always have the time to post about our experiences here as we are gutting and renovating the house room by room and still trying to get everyones new home constructed. I should probably take some before,, and after pictures but I only remember those AFTER we are done. We still have our chickens which are currently on strike and refuse to lay. We have raised hogs for nearly 6 years now, and are on our 4th year, raising hair sheep. While we are having fun this is a work in progress and some days we feel are more productive than other, but at the end of the day we look back and think "wow, we did that".

last weekend, we butchered our beef. This is a small rundown of the process (so as not to anger the Facebook censors, with too much blood & guts.) Each time I’ve tried to post the specifics (what cuts come from what muscle group, cutting stew meat, and grinding meat for ground beef.... Facebook keeps rejecting the post. So I apologize, this is all the pictures I can get “them” to approve.

Firstly, protect your clothes &/or wear something that can be easily cleaned. You will get messy.

You will want to dispatch the animal, as humanely as possible. Once you’ve done so, you’ll want to cut the throat for it to bleed out.

With deer, hogs, sheep or other smaller butcher jobs - we usually hoist into a tree. However, this fella was way too big to use our usual methods.

We proceeded to disassemble the carcass, on the ground.

We skinned only as much as needed, to remove each quarter. This allowed the hide to protect the meat, while we worked.

As each quarter was removed from the carcass, it was brought inside and submerged in an ice & salt bath, in our bathtub.

Of course, you will want to sanitize and disinfect your tub, before using.

Once all quarters were removed and inside, we began removing the torso. From that we cut the tenderloin out, and cut “tomahawk steaks”, from the rib pieces. Those required Frenching.

We cut stew meat, from the neck, between the ribs, and extra trimmings from various areas of the carcass. Trimming up steaks and roasts, offer great stew pieces.

Typically, we use more ground than anything. So while we did cut several roasts and steaks, we ground quite a bit from this fella.

All-in-all, we were pleased with the amount of meat we gleaned from this beef. Bones were roasted & boiled to make bone broth, and then pressure canned. Stew meat was also pressure canned.

Our Story

My wife and I decided that we were tired of living in town. Chickens started to keep us around for pure entertainment and invited guineas, geese, and rabbits to watch us transform the backyard from a field of grass and weeds to a garden. We decided that the neighbors were too close and we needed space to spread out as the garden and chicken pen took up over half the back yard. We decided to leave Missouri for a smaller home in Northeast Oklahoma in May of 2013. August of 2015, we moved further into Oklahoma, and closer to the capital of Cherokee Nation. This year, our chickens never got the message, when winter hit, and continued to lay! Our pigs are doing well, we should have a litter of piglets on the ground this Spring. We are growing our chicken production, to include specialty breeds, and will begin hatching chicks fall 2018! Our milk goats will soon be bringing a line of soaps and lotions to our farm-fresh products, and we are adding a very small flock of sheep, for homegrown yarns.

While we are having fun, this is a work in progress and some days we feel are more productive than others, but at the end of the day we look back and think "wow, we did that". We enjoy keeping in touch with our eggs, pecan, pork & beef customers. Follow us here on Facebook and on Instagram for updates & “the funny farm” stories.
