It’s National Cheese Day! This day makes me think of the recipe I made to use up leftover holiday ham. It’s a delicious Cheesy Ham and Peas with Pasta! An easy cheese sauce can be made by adding 2 tablespoons of butter, with 2 tablespoons of all-purpose flour in a skillet over medium heat. Stir the flour into the butter to make a thick paste, slowly whisk in 2 cups of milk. Season with 1 teaspoon of salt, pepper, and garlic powder. Once it bubbles, turn the heat down and gradually add 1 ½ cups of shredded cheddar cheese. Add 2 cups of cubed ham or chicken and 1 cup of peas and stir. Make a ½ pound of your favorite pasta according to directions on the package. Add the pasta to the cheesy sauce and stir. It makes about 4-6 servings. Your family and friends will be dancing around the table after eating this super cheesy dish! Enjoy!

I didn’t have Grandmothers who baked when I was growing up. So, at the young age of 9 I started baking and making yummy treats. Once I hit high school, I realized that homemade chocolate chips cookies were very popular with my boyfriends!
Now, it’s fun to bake and share with neighbors, coworkers, or the many organizations I participate in. Happy National Bean Day! If you’re like me, you may think refried beans are the BOMB! My Mother made the best refried beans. Her secret recipe? Canned refried beans, American cheese and a little water before you pop them into the microwave for 2 minutes of heating.
My version of her recipe? Canned refried beans, American cheese, Taco Bell mild sauce and a little chicken broth to moisten. I stir the ingredients in the bowl I am microwaving. I cover and pop it into the microwave for 2 minutes, then sitr and return to the microwave for an additional 1-2 minutes. Now you are ready for assembling burritos. If you want to use for nachos, thin the beans with more chicken broth to a thick soup consistency and drizzle over tortilla chips and add meat with cheese. Pop in the microwave to melt the cheese and add your favorite toppings before serving!

It's National Whipped Cream DAY ---HOORAY! Researching back to the 1960’s, the Grasshopper was a drink that many people enjoyed after dinner and it’s still popular today. It was created in 1918 in New Orleans as a drink entry into a New York Bartenders Association competition and took 2nd place! Me, I love a good grasshopper pie made with oodles of fresh whipped cream piled on top and still very similar to that historic drink the Grasshopper. It’s a throw-back, stellar dessert that adds that elegant touch to a dinner party. Join me in celebrating National Whipped Cream Day with the Grasshopper Pie recipe from the Baking Beauty’s website,

This cool and creamy grasshopper mint pie is no-bake and only requires 6 ingredients. This boozy chocolate mint dessert is perfection.

Happy National Spaghetti Day! As a newly married bride into an Italian family, I learned early to make a killer meat sauce for spaghetti. It was a favorite of my daughter’s for a quick meal without much fuss. I brown a pound of ground beef in a clove of fresh garlic or 1 tablespoon of chopped garlic from the jar in a frying pan. Remove the beef and discard any fat from the pan except 1 tablespoon. Fry a 6-ounce can of tomato paste in the fat in the frying pan for 1-2 minutes and return the ground beef to the pan with a 28-ounce can of crushed tomatoes. Add a tablespoon of oregano, parsley, and garlic powder. Add a teaspoon of salt and pepper. Stir and simmer on low for 20 minutes. Boil your spaghetti according to the directions on the package and top it with this fabulous meat sauce! Felice Buon Nuovo! Happy New Year!
