Zach is the cat whisperer in the family, but over the past few weeks I've been making an effort to befriend the neighborhood stray tomcat, with the hope of getting him de-tommed and maybe even homed. I'd say it's going well.

We are calling him Lop, after his lopped off right ear, and I wish he could tell me his story. He started showing up the edge of the yard a few months ago, but wouldnt let us touch him or get close. Then suddenly, just a day or two after I'd redone the protective charms on the porch, there he was meowing for snacks and pats - proving once again that cats and witches really do go together.

We had to go up to KC for a doctor's appointment this week, and the bright side was that I got to spend some time with my parents, who hooked me up with a dozen ears of sweet corn: 100% the best thing about growing up in rural Missouri!

I had a coworker long ago who had worked in a Mo's burritos and she taught me the tricks: warm the tortilla up (I use a damp paper towel and the microwave), pile the stuff in the middle, fold the sides up, then sort of scoop up the fillings as you go with the long end nearest you. It helps to have a sort of moldable filling; I shredded up some romaine and tossed it with tzatziki sauce, then put chopped grilled chicken on top. I like to wrap them in wax paper right after they're wrapped to keep the tortilla soft as it cools down. Plus it looks sharp af when you cut em.

Side note, we grew the tomatoes in the salad. It also has the last few chunks of cauliflower from the fridge and a can of white beans because Zach stocked us up twice in a row on them and we are good on white beans 😄

Over the weekend I made the rest of the cherry tomatoes my friend brought me into some picante sauce, and yesterday it saved the day! Nobody in the house felt like cooking, but both of us needed to eat. So I cooked a can of black beans into a jar of picante sauce and we feasted. Canning can be a lot of work, but it's totally worth it for future days when you just cannot (lol no pun intended?).

Sometimes on a hot day, we eat pre-made food. Because of my MS, I experience heat intolerance, so it's not even that I hate being hot and sweaty (I absolutely do), it's that I just start to...stop, when it gets much over 87 or so. So I have only been cooking very sporadically, and we've been eating out of boxes more than usual. And that's fine, eating is the goal, and if you ate today you're winning. If you haven't, let me know.

But the other day my friend brought by a goodly amount of beautiful cherry tomatoes, and I hooked her up with some mint jelly. And I threw some of those cherry tomatoes into my skillet with some garlic and stuff, and just sort of walked away (to the living room, where it's cooler). And it was just perfect for our pre-made cheese ravioli and salad kit.

I made oatmeal scotchies for my best friend D, and the nice thing about oatmeal scotchies is, my recipe makes at least 4 dozen cookies, depending on how big you make them. So we are having cookies for breakfast and that is living right.

I like to bake for my friends to thank them when they excell at being a friend. And D had the pleasure of helping me through a panic attack a little while ago, and she nailed it. I know she didn't do it for the cookies, and she knows I would do it for her, but the cookies are deserved nonetheless. And they are delicious.

Let's be gentle with ourselves and with our comrades as we cautiously re-enter our social circles. Especially if we are processing the past year through mental illness(es). It's a lot sometimes, we will find a balance.

Working my way through this gorgeous mint! A lot of people don't realize it, but mint jelly isn't green on its own; that bright color you find in store bought versions is just food coloring! This jelly also doesn't contain any flavoring extract, so the flavor is gentler and more herbal than most commercial mint jelly. It's nice and refreshing on crackers or toast, and it's going to make an excellent glaze for some grilled peaches later this week!

So last night my excellent neighbor/landlady asked me, do you want some fresh mint? So I said sure, and I headed over with a bag. And y'all, it was a good year for mint! We went home with 4 bags full, and didn't put a dent in it!

I'm gonna dry some for tea and make some jelly, and we will probably still have some leftover! The heat still has me pretty much useless, but I'm still over here manifesting produce.

Mint is good for magical workings to enhance health, luck and prosperity, and can also be used in protection work. Its association with the planetary energy of Mercury makes it helpful for boosting communication. It's also associated with Ta**us, which makes sense because it's delicious!

I never seem to do much that feels picture worthy in the summertime. Mostly I find somewhere cool to exist, and stay there. But I did make some delicious taquitos for dinner the other day, and it felt good to be in the kitchen again.
