Pomme d’Apple

Second post and I wanted to talk about the puff pastry. This is a sourdough puff pastry. When a sourdough bread meet a puff pastry using some croissant techniques.
So in reality is it really a puff pastry if we have some fermentation inside? meh not really! However, with that said, there is no final proof and when the Apple turnover is shape, it goes straight in freezer then when I need it I bake it straight from the freezer. So call it the way you want, but this an amazing recipe giving you very unique flavors and layers!

Also fun fact, pomme d’apple means “apple of the apple” 😅yep i was super inspired
