Ever since becoming vegan, I have been looking for ways to eat real food, not imitation processed fake products which try to mimic meat and dairy. This vegan calzone with cashew cream that I put together without a recipe, makes me so happy! It brings together a couple of different concepts near and dear to my heart. First of all who likes, gloppy, congealed, mozzarella cheese in a room temp calzone? I would wager not many people… Cashew cream is delicious room temperature as well as hot. Also, I realize I do a ton of cooking without recipes, and I want to inspire others to do the same! And finally, a calzone is just an Italian Knish am I right?
