It's been a while since I've talked about the reason for Jax Snax Tucson, so let's do a new introduction 😆
My name is Nikki, and I'm the owner/operator of Jax Snax Tucson, an Arizona Cottage Law Bakery. My son Jax is now 9, and has a rare and severe form of epilepsy called Lennox-Gastaut Syndrome. He also has Cortical Visual Impairment, and is nonmobile, nonverbal, and has severe developmental delays due to years and years of uncontrolled seizures. A year ago we had a g-tube inserted so Jax could fully be on the keto diet, and he has been (mostly) seizure free ever since. I am his full time caregiver, and had to quit my typical full time job several years ago, when there was a shortage of caregivers (which still continues).
I started Jax Snax Tucson to be able to make sure that I could provide the best life and care possible for Jax. With all of your support, I have continued to be able to provide that care. Earlier this year, there were changes made to the program that allows me to care for Jax, which means I need to be pushing Jax Snax Tucson a lot more.
This holiday season I am offering a lot more options for ordering and delivery, and I also have a lot more chocolate chip cookie accessories, as well as holiday baking accessories!
