Zucchini and Black Bean Skillet
2 medium zucchini
1 can black beans, rinsed
1 can fire roasted corn
1 can original rotel
1 can green chilis
2 cups minute brown rice
2 lb chicken breast
1 stick butter
1 tbsp olive oil
Red fajita seasoning (pic in the comments)
1. Preheat oven to 350*
2. In a full size casserole dish, place chicken breast with the stick of butter cut up and placed around. Season chicken heavily with red fajita seasoning. Bake for 15 minutes, flip and bake for another 15 minutes. Shred chicken and toss in butter sauces, set aside.
3. Cut zucchini and add to large frying pan with 1 tablespoon of olive oil, sauté until browned
4. In a medium pot, add zucchini, rotel, green chilis, corn and black beans with 4 cups of water. Bring to a boil, add 2 cups of brown rice, turn down heat to a simmer and cover until rice is tender.
You can add the chicken to the rice and eat it as is or you can put it on Toastadas with cheese or you could just eat it with tortilla chips!! It’s very versatile and delicious!! Follow me for more recipes!!!
