Spey casting is an art both ancient and new. I learned a lot about it this last weekend and for those of you who find the term unfamiliar I'll tell you about it sort of the way I learned. When I still lived in Southern California I took fly-casting lessons from the Long Beach Casting Club. I could cast a fly accurately out to about thirty feet but getting farther frustrated me. As the Campbell's company has been insisting for ages, soup is good food. Indeed it is, though preferably not from a can! Soup has a number of advantages that go back to the dawn of humanity. Old guns, as I commented before, are the guns I like best. As Jay Gardner wrote, "It's a question of soul." New, latest technology guns have their place, it's true. My Beretta A400 Explor is definitely my weapon of choice when it comes to throwing heavy charges of steel shot. These aging bones and joints just appreciate the multiple recoil management systems. Whether it was the smallmouth bass or its largemouth cousin I'm not sure. But in 1881 Dr. James Henshall declared black bass "Inch for inch and pound for pound, the gamest fish that swims", and I can do nothing but utter a heartfelt, "Amen!" Have you noticed that the shooting parties on Downton Abbey never shoot waterfowl? The reason seems to be that the great estates used game as a crop to be managed and sold and waterfowl are notoriously uncooperative with the gamekeeper. Grouse to a degree and pheasants very much so are quite manageable. You can modify their habitat or, in the case of pheasant, even pen raise them for release. [ 797 more words. ]

With the exception of Heinz Beans on toast, legumes don't seem to have been part of the traditional countryside cuisine. Even my copy of Irish Countryhouse Cooking, which is chock full of ways to cook the fish and game of the British Isles, has only a couple of recipes and those are for those odd broad beans we rarely see on this side of the pond.
