🍪 Base & crumble:
2 cups flour
1 cup rolled oats
¾ cup brown sugar
½ tsp baking soda
½ tsp salt
¾ cup cold butter (cubed)
☕ Coffee layer:
1 tbsp instant coffee (or espresso powder)
2 tbsp hot water
1 can (400g) sweetened condensed milk
1 tsp vanilla extract
👩‍🍳 Instructions:
Preheat oven to 180°C (350°F). Line a square baking pan with parchment paper.
In a bowl, mix flour, oats, brown sugar, baking soda, and salt.
Cut in cold butter until crumbly (like wet sand).
Press half of the mixture into the pan to form the base.
In a small bowl, dissolve coffee in hot water, then mix with condensed milk and vanilla.
Pour coffee mixture over the base layer.
Sprinkle remaining crumble evenly on top.
Bake for 25–30 minutes until golden.
Let cool completely before cutting into bars.
