Crispy Bourbon Pepper Jack Steak Street Tacos đ„©đźđ„
These are the kind of tacos that do not politely sit on the plate. Crispy toasted tortillas, bourbon-glazed steak, melty Pepper Jack cheese, and smoky roasted poblano all packed into one messy, ridiculous bite. Sweet, spicy, cheesy, crispy, and honestly a little dangerous because stopping at one does not feel realistic.
Ingredients:
* 1œ lbs sirloin steak, diced
* 6 small flour tortillas
* 1 cup shredded Pepper Jack cheese
* 1 roasted poblano pepper, sliced
* Œ cup bourbon
* 2 tbsp brown sugar
* œ cup sour cream
* Splash of lime juice
* Butter for toasting tortillas
Instructions:
1. Season the diced steak and sear it in a hot skillet until browned and caramelized.
2. In a small pan, simmer bourbon and brown sugar until slightly thickened.
3. Toss the cooked steak in the bourbon glaze until coated.
4. Fill each tortilla with Pepper Jack cheese, bourbon steak, and roasted poblano strips.
5. Fold the tacos and toast them in a buttered skillet until golden and crispy on both sides.
6. Mix sour cream with a splash of lime juice for a quick crema.
7. Drizzle the crema over the tacos and serve hot.

Notes: Add crispy fried onions, sliced green onions, extra Pepper Jack, or jalapeños if you want even more crunch and heat.
