Lemon Herb Chicken Bowl with Roasted Broccoli & Glazed Carrots β¨π₯¦π₯
This bowl is giving cozy healthy dinner with major flavor vibes π β juicy lemon herb chicken, crispy parmesan broccoli, and sweet caramelized carrots all packed into one comforting meal!

For the Chicken
2 chicken thighs, bone-in & skin-on
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt & black pepper, to taste
2 lemon slices
Β½ tsp dried thyme
For the Roasted Broccoli
3 cups broccoli florets
1 tbsp olive oil
2 tbsp grated parmesan cheese
1 tbsp breadcrumbs
Salt & pepper, to taste
For the Glazed Carrots
2 cups baby carrots
1 tbsp butter
1 tsp honey
Pinch of salt & pepper

Preheat oven to 400Β°F (200Β°C).
Season chicken with garlic powder, paprika, thyme, salt, pepper, and olive oil.
Place lemon slices over the chicken and roast for 35β40 minutes until golden brown and juicy.
Toss broccoli with olive oil, parmesan, breadcrumbs, salt, and pepper.
Spread broccoli on a baking tray and roast for 20 minutes until crispy on the edges.
Heat butter in a skillet and add baby carrots.
Stir in honey, salt, and pepper, cooking for 6β8 minutes until glossy and caramelized.
Arrange the roasted chicken, parmesan broccoli, and glazed carrots in a serving bowl.
Spoon extra pan juices over the chicken and serve warm!
