When you take them out of the pan, put the boiled eggs immediately in a bowl of ice water. The egg shrink inside the shell and disconnect from it. After a few minutes in the ice water, just tap the egg multiple times on the counter to crack the shell in several places. The shell will peel right off without being stuck to the egg inside.
