There’s leftover chocolate on my thumb from the first take

I stopped my dryer for this

What an honor it was to supply my best friend’s cutie pie baby shower with some homemade pies! I went with a creamy apple, southern pumpkin, both with all butter crusts. And then I doubled the French silk with a chocolate cookie crust, because I didn’t want to risk her missing out on a midnight slice 😋 Baby Simms is already so loved 🥹🤍

Adding cookie butter makes for the chewiest consistency! I doubled the recipe for myself, but the one I’ve included should make about 20.

Instructions:

Preheat your oven to 350, line your pans with parchment, and don’t forget to trim the excess!

Cream your sugars, butter, and cookie butter for atleast 2-3 minutes, this is going to give your cookies a good rise and light fluffy texture.

Add eggs and vanilla and mix. Do not over mix, the sugar can precook the eggs.

In a separate bowl, whisk dry ingredients. Add to the mixer but mix only until just combined.

Add crushed cookies and mix with a spatula. Again, do not. over. mix.

Scoop two tablespoon balls onto baking try 2 inches apart. Bake for 10-12 minutes.

When removing from oven, drop cookies on to stove top to help settle for a chewy texture.
