This rich and comforting potato bake features tender sliced potatoes smothered in a creamy garlic-Parmesan sauce with herbs and onions. As it bakes, the potatoes absorb the flavorful sauce, creating a golden, cheesy, melt-in-your-mouth side dish that's perfect for family dinners, holidays, or potlucks.

Ingredients
2 lbs (900g) potatoes, sliced into wedges or thick slices
2 tbsp butter
1 small onion, finely diced
3 cloves garlic, minced
2 tbsp all-purpose flour
2 cups (480ml) milk or heavy cream
1 cup grated Parmesan cheese
1 tsp dried thyme
1 tsp parsley (plus extra for garnish)
Salt and black pepper to taste
1 cup shredded mozzarella or cheddar cheese (optional)
Instructions
Preheat oven to 375°F (190°C).
Grease a baking dish and arrange the sliced potatoes evenly.
In a saucepan, melt butter over medium heat. Add onion and cook until softened.
Stir in garlic and cook for 30 seconds.
Add flour and whisk for 1 minute.
Gradually pour in milk or cream, whisking continuously until smooth and thickened.
Stir in Parmesan cheese, thyme, parsley, salt, and pepper.

Instructions

Season the pork

Pat the pork tenderloins dry with paper towels. Rub them with olive oil, salt, pepper, paprika, and Italian seasoning.

Make the cooking liquid

In a bowl, whisk together the chicken broth, soy sauce, Worcestershire sauce, brown sugar, garlic, and red pepper flakes if using.

Cook

Place the pork tenderloins in the slow cooker and pour the sauce over the top. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the pork reaches an internal temperature of 145°F (63°C).

Rest and slice

Remove the pork from the slow cooker and let it rest for 5–10 minutes. Slice into medallions and spoon some of the cooking juices over the top.
