3 day marathon at Brightwaters Farms! Once again, there every weekend in October.

Speaking of the pumpkin farm (see pictures)...

Recipe for Pumpkin Souffle:

Carve pumpkin into jack-o-lantern - take out all seeds and stringy stuff. You can bake the seeds on a cookie tin, just spray with oil and sprinkle with salt if you have the patience to deal with the things when they're done. Throw out stringy stuff.

Remove as much pumpkin meat(?) as you can. The thinner the walls of the pumpkin the cooler it looks when you're done carving, and the more souffle you have.

Boil pumpkin meat/stuff until mushy.

Mix (approximately):

4 tablespoons melted butter
2 eggs
2 cups of the pumpkin mush
1 cup sugar
1/2 cup flour
1 teaspoon vanilla
a little salt
a little baking soda. Maybe a little more.
a little cinnamon. Two littles.

Sprinkle cinnamon on top, bake at 450 degrees for 30 minutes. Then check and probably cook a little longer, I never figure it out right :) Poke with thin knife to see if ready. If it screams it isn't.
