It's so difficult to stay hydtated during the colder months! So here's a little 💨 Baddie Beauty Hack that's been used in traditional chinese medicine for probably thousands of years. ✨️
Snow fungus soup with apples and lotus seeds is a popular, nourishing Chinese dessert that is easy to make and can be served warm or chilled. It is believed to be beneficial for skin health, lung function, and general well-being.
I used 3 medium snow fungus heads (soaked)
2 medium apples
A hand full of white lotus seeds pre pitted.
10 red dates (jujubes), pitted and chopped
A Hand full of Peach Gum (Soaked and cleaned)
8 cups (about 2 Liters) water, plus more for soaking
Rock sugar (to taste), cinnamon to taste,vanilla to taste
*A couple table spoons of chia seeds, you can also use basil seeds.
Instructions
Prepare the dried ingredients:
Soak the snow fungus in cold water for at least 30 minutes, or until it has fully expanded and turned soft. Trim and discard the hard, dark yellow base with kitchen scissors, then tear the rest into bite-sized pieces.
Rinse the lotus seeds & peach gum. Soak them seperately in warm water for about 30 minutes.
Rinse the red dates, remove the pits and chop them.
Prepare the apples:
Wash the apples thoroughly. You can peel them if you prefer, but it is not necessary. Core the apples and cut them into wedges or chunks. Soaking the cut apples in lightly salted water can prevent browning before cooking.
Cook the soup:
In a large pot, bring 8 cups of water to a boil. Add the prepared snow fungus, lotus seeds, and red dates, chia seeds. Stir occasionally so the chia seeds don't clump
Once the water boils again, reduce the heat to low, cover the pot with a lid (leaving a small vent), and simmer for at least 60-90 minutes, or until the snow fungus reaches your desired soft, gelatinous consistency.
Finish and serve:
During the final 5-10 minutes of simmering, add the apple chunks, cinnamon, vanilla extracr and rock sugar to taste. Stir until the sugar is fully dissolved.
