Texas-style barbecue:
🥩 Meats
- Beef brisket (the crown jewel)
- Beef ribs
- Pork spare ribs
- Sausage (especially jalapeño-cheddar or Czech-style)
- Turkey breast
🧂 Seasonings
- Kosher salt
- Coarse black pepper
- Optional: garlic powder, paprika, cayenne (for a twist)
🔥 Wood for Smoking
- Post oak (classic choice)
- Mesquite (stronger flavor)
- Hickory (less traditional, but works)
🍽️ Essential Equipment
- Offset smoker or pellet grill
- Meat thermometer
- Butcher paper or foil (for wrapping)
- Charcoal or wood chunks
- Spray bottle (for spritzing with apple cider vinegar or beef broth)
⏱️ Cooking Steps
1. Trim the meat — remove excess fat
2. Season generously — salt and pepper is often enough
3. Smoke low and slow — 225–250°F for brisket, often 10–16 hours
4. Spritz occasionally — keeps bark moist and flavorful
5. Wrap during the stall — around 160°F internal temp
6. Rest the meat — at least 1 hour before slicing
🍴 Classic Sides
- Pinto beans
- Coleslaw
- Potato salad
- White bread and pickles
- BBQ sauce (optional in Texas!)
