maple bourbon pecan cheesecake
Ingredients:
For the Crust:
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup pure maple syrup
- 1/4 cup heavy cream
- 1 cup chopped pecans, toasted
For the Pecan Topping:
- 1 cup pecan halves
- 1/4 cup pure maple syrup
- 1 tablespoon unsalted butter
Instructions:
1. Preheat your oven to 325ยฐF (160ยฐC). Grease a 9-inch springform pan.
2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
3. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the vanilla extract and mix well.
4. Add the eggs, one at a time, mixing well after each addition. Then, mix in the maple syrup and heavy cream until fully incorporated. Gently fold in the chopped pecans.
5. Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
6. While the cheesecake is cooling, prepare the pecan topping. In a small saucepan, melt the butter over medium heat. Add the pecan halves and maple syrup, stirring to coat. Cook for about 5 minutes, until the pecans are toasted and fragrant.
7. Once the cheesecake has cooled, remove it from the springform pan and top with the maple pecan mixture.
8. Refrigerate the cheesecake for at least 4 hours, or overnight, before slicing and serving.
