🥞🫐 BAKING NOTE #1: Buckwheat Blueberry Pancakes! 🫐🥞

When the pancakes disappear, you know you've got a winner! 😋

Last week, I whipped up a batch of Buckwheat Blueberry Pancakes for our monthly men's prayer breakfast. We cooked them outdoors on my buddy Cole's Blackstone Grill, and they were a HUGE hit!

Not a single pancake was left! Well... almost none. 😉 I managed to hide about ten to bring back to the Country Cottage for Michelle and Lucas to taste-test.

Guess what? They disappeared just about as fast! 😂

After two successful taste tests, I figured this recipe was too good to keep to myself. So, let's get cooking!

🫐🥞 MARK'S BUCKWHEAT BLUEBERRY PANCAKES

🥣 INGREDIENTS

🌾 1 cup Severson Farms Buckwheat flour
🌾 1 cup Severson Farms Turkey Red all-purpose flour
🥄 1/4 cup granulated sugar
🥄 4 teaspoons baking powder
🥄 1/2 teaspoon baking soda
🧂 1/2 teaspoon salt
🥛 1 3/4 cups milk
🧈 1/4 cup melted butter
🍦 2 teaspoons pure vanilla extract
🍋 2 teaspoons lemon juice (don't skip this!)
🥚 1 large egg
🫐 1 1/2 cups blueberries

👨‍🍳 LET'S MAKE PANCAKES!

1️⃣ MIX THE DRY INGREDIENTS
Whisk the flours, sugar, baking powder, baking soda, and salt in a large bowl. Make a well in the center.

2️⃣ MIX THE WET INGREDIENTS
In a separate bowl, whisk together the milk, melted butter, vanilla, lemon juice, and egg.

3️⃣ COMBINE
Pour the wet ingredients into the well in the dry ingredients. Stir until combined, leaving a few lumps. Don't overmix!

4️⃣ ADD THE BLUEBERRIES 🫐
Gently fold the blueberries into the batter.

5️⃣ LET THE BATTER REST ⏰
Let it sit for 30–60 minutes to give the flours time to absorb the moisture.

6️⃣ FIRE UP THE GRIDDLE! 🔥
Cook on a lightly greased, preheated griddle until bubbles appear and the edges begin to set. Flip and cook until golden brown and cooked through.

☕ MY ADVICE? MAKE EXTRA!

These pancakes were a hit at the prayer breakfast and passed the Country Cottage taste test with flying colors. Now it's your turn!

🌾 Stop by the Country Cottage at 520 S. 1st Street in LaSalle to pick up your Severson Farms flours and give this recipe a try.

When we were looking at the selection of Chai’s from the Chai Box, one name stood out as a necessary Chai that we had to offer at the Country Cottage. That chai was Kick Cancer’s Ass. So far, the response has been very positive. But we do not want to offer this Chai to you based on name alone. We decided to do a little research and discover why this Chai should be used by anyone facing cancer. Below is a Google research result based on the ingredients in the Chai. The knowledge and wisdom of the Chai maker who created this blend is inspiring. Not a cure, but a Chai that can optimize your body’s ability to heal itself in addition to the prescribed treatments from your preferred health provider ..……
The provided text outlines how specific plant-based ingredients interact with cancer cells and inflammation in scientific studies. The core findings highlight a distinction between promising laboratory results and the need for more definitive human clinical trials.

Key Scientific Findings by Ingredient

• Black Tea: Contains polyphenols (theaflavins and thearubigins) that stop tumor growth and force cancer cells to self-destruct in lab settings. However, human population studies show inconsistent results regarding actual cancer risk reduction.

• Ginger: Contains gingerols and shogaols, which slow cancer cell division in colorectal and ovarian models. It is clinically proven to help manage chemotherapy-induced nausea.

• Cardamom: Contains cardamonin and limonene. Animal models show it strengthens Natural Killer immune cells and activates detoxification enzymes to fight tumors.

• Tulsi (Holy Basil): Contains flavonoids and eugenol. It shields healthy cells from radiation and chemical damage while triggering death in cancer cells.

• Ajwain (Carom Seeds): Rich in thymol, a strong anti-inflammatory that freezes the replication cycle of multiple cancer lines in test tubes.

• Clove: Holds a high concentration of eugenol. It damages cancer cell walls and blocks angiogenesis, preventing tumors from growing new blood vessels.

• Star Anise & Fennel: Both supply anethole, a compound that shuts down NF-kB, a key protein pathway used by cancer cells to thrive and cause inflammation.

We carry both 2.5 oz and 6 oz. loose leaf pouches for sale. Come check out the Chai today at 520 First St., Lasalle. Come see Michelle LaValle or Mark McClenning if you would also like to pray for healing and a petition at the Courts of Heaven. God bless you all.
