Hey sounds up your alley

Jamaican Oxtail Stew
---Ingredients:
3 pounds oxtails
2 tablespoons vegetable oil
1 onion, chopped
4 cloves garlic, minced
2 carrots, diced
2 potatoes, diced
2 stalks scallion, chopped
2 sprigs thyme
2 cups water
2 cups beef broth
1 can butter beans, drained
1 Scotch bonnet pepper, whole (optional)
Salt and pepper to taste
---Directions:
In a large pot, heat the vegetable oil over medium-high heat.
Add the oxtails and brown them on all sides. Remove and set aside.
In the same pot, add the chopped onion and minced garlic. Sauté until fragrant and the onion becomes translucent.
Return the browned oxtails to the pot and add the diced carrots, potatoes, scallion, thyme, and Scotch bonnet pepper (if using).
Pour in the water and beef broth, ensuring the oxtails are covered. Bring to a boil.
Reduce the heat to low, cover, and simmer for 2 to 2.5 hours or until the oxtails are tender and almost falling off the bone.
Add the drained butter beans and simmer for an additional 15 minutes.
Season with salt and pepper to taste.
Prep Time: 20 minutes | Cooking Time: 2.5 hours | Total Time: 2 hours 45 minutes
Kcal: 350 kcal | Servings: 4 servings

Sorry I haven't been keeping up my page I been fighting for my life off and on since 2015 my last update. I been on life support 6 times since then and in ICU a few times for other things. But, good news I have been better I haven't been in the hospital for anything in a couple of months. I just about done with one other and I have started two others. As soon as I figure out how to (now don't laugh) to put my phone pictures into my page you will see new pieces. Wish you all a healthy and happy life I keep stock and can make to order.

Well good morning everyone, am in Joliet, Ill got here yesterday for a reunion of CBMU 302 it is Seabees (Navy) and I do set up my jewelry and hopefully sale a lot or at least some with some personal orders which I get. Please watch for my new pieces I made things for the show here I haven't dpownloaded them yet to here. I looking for my cord but, anyway I am going to do that while I am set up this morning. I have been real busy this last couple of weeks making new stock. Please check back for new pics I have a show in Chicago area next weekend again will post pics, it is a reunion of my better halfs milatary reunion it is a great time. I have enjoyed seeing all then hits a nd reviews of my site here. One last note I have been able tostay out of the hospital now since the beginning of 'August. I did spend July in there again. Been in the hospital from Feb.12 thru April 01, 2015 so haven;t
made a lot. But, I was commissioned in December for 10 rings alone then just before I went into the hospital I was asked to design a sterling silver ( look for a picture of it comin g soon) and she wanted one of my big rings which has been very popular. I am setting up a new web site. Hopefully be done with it next few weeks takes a lot of work.
