Recipes from the Phrog and Munkey Teaching Kitchen
Green Chili Cheesecake
3 tsp. Cornmeal
3 (8 0z.) pkg Cream Cheese - softened
1 envelope Taco seasoning
1 1/2 c. Sour Cream
1/2 c. Salsa
2 eggs lightly beaten
1 c. Shredded Pepper Jack Cheese
1 (4 oz.) can Chopped Green Chilies - drained
1 c. Black Olives - chopped
Chopped Tomatoes, Green Onions, Chopped Jalepeno and Cheddar Cheese for garnish
Preheat oven to 350°. Using a 9" spring form pan, sprinkle cornmeal on bottom of pan. Mix cream cheese until smooth. Add taco seasoning, 1/2 cup sour cream and salsa. Stir in pepper jack sheese and chilies. Fold in 1/2 cup olives. Pour over cornmeal. Place pan on baking sheet and bake for 30-35 minutes (until center is almost set). Cool on wire rack for 10 minutes. Refrigerate overnight in pan. Remove sides of spring form pan, spread remaining sour cream over top, garnish with black olives, green onions and chopped jalepeno.
