One-Pot Pasta with Zucchini Recipe

Ingredients:

12 oz (340 g) spaghetti or your preferred pasta

2 medium zucchinis, thinly sliced

3 cups (720 ml) vegetable or chicken broth

2 cups (480 ml) water

3 cloves garlic, minced

1 medium onion, finely chopped

2 tbsp olive oil

1 cup (240 ml) heavy cream (optional for a creamy version)

1/2 cup grated Parmesan cheese (plus extra for serving)

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil leaves, for garnish

Instructions:

1. SautƩ Aromatics:
In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cooking until fragrant and softened (about 2–3 minutes).

2. Add Liquids and Pasta:
Pour in the broth and water, and bring to a boil. Add the pasta, stirring to prevent sticking.

3. Add Zucchini and Seasonings:
Once the pasta begins to soften (after 5 minutes), stir in the zucchini, oregano, red pepper flakes, salt, and black pepper.

4. Cook Until Done:
Reduce the heat to medium-low and simmer, stirring occasionally, until the pasta is cooked and most of the liquid is absorbed (about 10–12 minutes).

5. Make It Creamy (Optional):
Stir in the heavy cream and Parmesan cheese. Cook for another 2 minutes until the sauce thickens slightly.

6. Serve:
Garnish with fresh basil and extra Parmesan. Serve immediately while warm.

Tips:

For a vegan version, skip the Parmesan and cream or use plant-based substitutes.

Add a protein like grilled chicken, shrimp, or chickpeas for a heartier meal.

If you prefer your zucchini more tender, add it earlier in the cooking process.

Enjoy your simple and delicious one-pot meal!

Here’s a recipe for Copycat Crumbl Mom’s Cookies that replicates their deliciousness. These cookies are soft, chewy, and packed with chocolate chips and oats:

---

Ingredients

1 cup (2 sticks) butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

2 cups old-fashioned oats

1 1/2 cups semi-sweet chocolate chips

1/2 cup shredded coconut (optional, for added texture)

1/2 cup chopped walnuts or pecans (optional)

---

Instructions

1. Preheat the oven: Set it to 350°F (175°C) and line baking sheets with parchment paper.

2. Cream butter and sugars: In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until creamy and smooth, about 2-3 minutes.

3. Add eggs and vanilla: Mix in the eggs one at a time, followed by the vanilla extract.

4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

5. Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

6. Add oats and mix-ins: Fold in the oats, chocolate chips, coconut, and nuts if using.

7. Scoop and shape: Use a cookie scoop or spoon to drop dough balls (about 2 tablespoons each) onto the prepared baking sheets, spacing them about 2 inches apart.

8. Bake: Bake for 10-12 minutes or until the edges are golden brown and the centers look set. Do not overbake.

9. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

---

Tips

Use high-quality butter and chocolate for the best flavor.

Slightly underbake the cookies for a soft, chewy center.

Store cookies in an airtight container for up to 5 days, or freeze for longer storage.

Enjoy these cookies with a glass of milk or share them with loved ones for a nostalgic treat!

Marc Gendron One-Pot Pasta with Zucchini

Ingredients

8 oz (225 g) spaghetti or your preferred pasta

2 medium zucchinis, sliced into thin rounds

3 garlic cloves, minced

2 tablespoons olive oil

4 cups (950 ml) vegetable broth or water

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1/2 cup (50 g) grated Parmesan cheese (optional, for serving)

Fresh basil leaves, for garnish

Instructions

1. Prepare the Ingredients:
Wash and slice the zucchinis into thin rounds. Mince the garlic.

2. Cook the Base:
In a large pot or deep skillet, heat olive oil over medium heat. Add the minced garlic and sautƩ for about 1 minute until fragrant.

3. Add the Zucchini:
Stir in the zucchini slices and cook for 3-4 minutes, until they begin to soften.

4. Add Pasta and Broth:
