Tandoori red snapper over mashed potatoes and steamed red Swiss chard. Topped with creamy tarragon lobster

Tandoori marinade

1 cup Greek yogurt
2 TABLESPOONS paprika
1 tablespoon garam masala
1 tablespoon ground cumin
1 tablespoon turmeric
2 teaspoons salt
2 teaspoons black pepper
1 tablespoon garlic powder
2 teaspoons onion powder
6 drops of red food coloring
1/4 cup olive oil
Juice of 1 lime

Add all ingredients in a bowl and mix until combined

Coat the marinade on the fish

Heat grill to roughly 350 degrees
Grill for about 7 mins on skin side, flip and grill for 5 mins.

Mashed potatoes

Cut gold potatoes into quarters and soak in cold water and salt. Let it sit for 10 mins. Drain the potatoes and wash again til the water runs clear.

Add the potatoes into salted boiling water. Boil until fork tender.

Drain potatoes and add heavy cream and butter. Mash the potatoes to your desired consistency. Salt and pepper to taste.

Red Swiss chard

Separate the stem from the leaves on the chard.
Slice the stems quarter inch thick and set aside.

Roughly chop the leaves and set aside.

Add oil to a wok and heat until smoking. Add the chopped stems and sauté until tender.

Add the leaves to the wok and stir. Cut the heat off and cover. Allow the steam to cook the leaves. Salt and pepper to taste.

Cook lobster meat in a pan of butter and chopped tarragon on medium low heat. Once lobster is halfway cooked through remove. Reduce heat to low and Add half a cup of Greek yogurt to the butter in pan. Stir until combined. Add back in lobster meat and stir until lobster is fully cooked through. Approximately 2-3 mins.

Plating

Add mashed potatoes to the center of the plate. Put Swiss chard on top of the potatoes. Then add the grilled fish on top of the chard. Add your creamy lobster on top of the grilled fish. Drizzle as much sauce as desired on top. Garnish with parsley and sliced lemons or limes on the side of the plate.
