Part 2: Basil Harvest Series-Basil Infused Olive Oil
We have been busy harvesting our basil plants before the summer heat kills them. We are creating some fun recipes to preserve the basil so we are able to enjoy it into the winter months. Come make some basil infused olive oil with me and stay tuned for next week basil garlic butter recipe!
Basil Olive Oil Recipe:
Ingredients:
-2 to2 1/2 cups fresh basil leaves (loosely packed) 🍃
-1 nice size clove of garlic 🧄
-1 3/4 cups of extra virgin olive oil divided 🌾
-1/4 tsp coarse or kosher salt 🧂
1. Blanch the basil leaves in boiling water for 10 seconds then strain the basil and transfer it to a small bowl of ice and water creating an ice bath to stop the cooking.
2. Drain the water out of the ice bath and place the basil in a blender. Loosely mince the garlic, add salt, garlic, and half of the olive oil to the blender process it well.
3. Add the remaining one and 1/4 cup of oil to the blender and process.
4. Store your basil in an airtight container for a week in the fridge or freeze in portions using an ice cube tray for up to six months.
