Man...we can relate to this with old habits!
Just as in life and relationships, some lumps of clay are just not okay. You can relayer them a thousand times, and wedge them forever and add moisture and they still aren’t right. So you place them on your wheel and center the best you can, maybe resorting to a sort of lathe method to make them round. Then you work past the thicknesses and open the air bubbles and hope for the best. Sometimes it works beautifully and sometimes it just collapses. When it fails you, it’s perfectly okay to admit defeat and pitch that lump of clay in the trash and use a different lump. Sometimes that is the best solution. And you wonder what took you so long to do it.
