Another simple watercolor.

I haven't picked up my watercolors in a long time but the other day my virtual run was through an Aspen forest in autumn and I had to paint it.

If you've never had pizza beans, what are you waiting for?

They're yummy, nutritious, and full of fiber.

Olive oil
Garlic
1 can peeled San Marzano tomatoes
2 cans white beans drained and rinsed
Basil
Oregano
Italian seasoning
Red pepper flakes
1 container silken tofu blended with almond milk until smooth
Frozen chopped spinach
1 cup reconstituted TVP
3 tbls nutritional yeast
Salt, pepper, msg to taste
2ish cups mozzarella

Preheat oven to 450°F.
In large Dutch oven, cook garlic in olive oil.
Add everything before cheese. Bring to a simmer.

Add cheese. Cover and bake for 10 minutes.

Serve with crusty bread.

Higher Protein Cheese Sauce

1 box silken tofu
4 T nutritional yeast
1 can diced tomatoes with chilies
Garlic powder, onion powder, chili powder
Blend until smooth.

Heat on stove.
Add:
Cheese, shredded (dealers choice)
Reconstitute 1 cup TVP

This week, we're doing our holiday meal in July.

For breakfast, I made a loaf of cinnamon/cardamon sourdough that we are using for French toast.

It's so flavorful and delicious!
