Tonight's dinner brought to you by: it's too hot to turn the oven on, so I had to swerve.
This dense bean salad has no right being as delicious as it is.
Chop up 16 oz of your favorite mushrooms. Toss them in a big bowl.
Chop up 1-2 bell peppers (yellow, red, orange, or purple). Into the bowl they go.
Drain and rinse 3 cans of beans. You decide what you want. I used chickpeas, red, and pinto beans. Into the bowl!
If you have any cheese that you need to use up, throw that in. I had feta and Parmesan.
Give it a decent amount of your favorite buffalo sauce, about a quarter cup. Sprinkle with garlic powder, onion powder, chili powder, Italian seasoning, salt, and pepper. Let your heart guide this.
Whisk 1/8 cup olive oil with 1/8 cup good balsamic. Into the bowl.
Mix it all up really well and enjoy!
