Eating my way through Taipei, one bowl at a time. 🇹🇼🍜

Everyone asks me for restaurant recommendations when they travel. I always give them this instead: book a cooking class.

This one was at Cookinn in Taiwan, and it might have been my favorite hour of the entire trip. You don’t just eat the food, you learn why it works. The ratios, the techniques, the little tricks that turn a home cook into someone who actually understands the cuisine instead of just visiting it.

I walked out with a cookbook, a few new tricks for my own kitchen, and a much better answer than “where should I eat” for anyone planning a trip.

So here’s my real number one travel tip: skip a reservation, book a class instead. You’ll remember it long after the meal is gone.

PAD THAI CHICKEN WINGS 🔥🍗

Sweet, tangy, savory, and packed with Thai flavor.

Ingredients:
• 2 lbs chicken wings
• ½ cup Chef Nikky Pad Thai Sauce
• 1–2 tbsp Thai chili crunch
• 1 tbsp fresh lime juice
• Crushed peanuts
• Sliced green onions
• Fresh cilantro
• Crispy shallots, optional

Directions:

1. Cook your chicken wings until golden and crispy.
2. Add the hot wings to a large bowl.
3. Pour over Chef Nikky Pad Thai Sauce, Thai chili crunch, and fresh lime juice.
4. Toss until every wing is completely coated.
5. Finish with crushed peanuts, green onions, cilantro, and crispy shallots.

The longer I do this, the bigger the world of food gets — ingredients I’ve never touched, techniques I haven’t learned, cuisines I barely understand. There are people who can teach me things I don’t even know enough to ask about yet.

And honestly? Good.

I never want to become the chef who walks into a kitchen thinking there’s nothing left for her to learn. Someone will always know something you don’t — sometimes it’s the person who’s been in the industry twice as long as you, sometimes it’s the newest cook on the line. Both deserve your respect.

Being good at something doesn’t mean you’re done growing. Staying a student is what keeps this whole thing exciting.

I know I’m a good chef. But I will always be a student first. 🌶️

1. You’ll eat more meals in your car than at a table.
Case in point — this is lunch today. Parked outside location inhaling my own food between meetings because it’s the only 10 minutes I’ve got.

2. “Owner” means every job, every day.
Some days I’m plating. Some days I’m fixing a walk-in cooler. Some days I’m both, an hour apart.

3. The hustle never actually slows down — even at 5 locations in.
People assume it gets easier. It doesn’t get easier. It gets bigger.

But here’s the thing — even rushed, even eaten in a parking lot — the food still has to taste like it came from Asian Mint. That part is non-negotiable. Sense the aroma, Observe the craft, Savor every bite — even when “savor” happens in five minutes flat.

This is the real behind-the-scenes of building something you love. Not glamorous. Just real.
