This birthday celebration dinner will begin with a Mexican guayaba margarita. Did you know that guayabas as they’re called in their original name were domesticated at least 5,000 years ago, from southern tropical Mexico to northern South America by the Mayans? The plant spread throughout North and Central America and the Caribbean islands via humans, birds, and other animals. Colonization then spread the fruit to other continents. In the english speaking world, they’re called guavas.

Ropa vieja or carne desmechada as it is called in Mexico is a dish steeped in history. The recipe is over 500 years old and it originated with the Sephardic Jews in the Iberian peninsula of Spain. Because cooking was not allowed on the Sabbath, the Sephardi would slow-cook the hearty stew the night before.
