Reflecting back now, I remember 20 hour days for 2 years running the buffet, then switched to menu, no with no staff solo, not knowing if the band would out number the crowd, or if it was going to pack overflowing to the parking lot.
Never any shortcuts trying to create a evening. Then a group would roll in already smashed. Guest would scatter like I turned on the floodlights.
Now I know how many are showing how they eat. It's finally came full circle.
