Jingalov Hats - flatbreads filled with herbs
I haven’t had an opportunity to cook much, but when I have a chance, I have my go-to recipes. I only learned this recipe in the last year, but it is a keeper—and has become one of my favorite snacks. I make them early in the morning, munch on them all day, and share with friends I see that day. Who knew a little herb sandwich could be so easy and delicious?
Recipe from
Dough:
2/3 cups
1 t salt
1 1/2 cups AP flour
Filling:
8 cups of minced greens and herbs
I used: dill, parsley, dandelion greens, spinach, cilantro, Thai basil, Sorel, green onion.
Salt & Pepper
Paprika
Chili flakes
1 T Lemon juice
1 1/2 T oil
1. Make the dough by combining the water and salt. Incorporate the flour and knead in the bowl—it should be sticky.
2. Dust a surface with flour and knead the dough until smooth.
3. Oil the bowl and place the dough back in the bowl and cover with a wet paper towel for about an hour.
4. Prep the greens as the dough rests.
5. Place the dough on the counter, dividing it into four equal pieces, rolling out one at a time to an 8” circle about 1/4” thickness.
6. Fill with the chopped greens and pinch the edges together to look like a football shape.and flatten.
7. Heat a pan and cook, seam side down for 2-3 minutes and turn until evenly browned.
