Roasted tomato soup + sourdough grilled cheese made with tomatoes from my garden because soup season is officially here.

Huge shoutout to Sky House Kitchen for the original recipe inspiration. I’ve made her version before and LOVE it. For my family, I swap the goat cheese for cream cheese and add chicken broth for our version.

Roasted Tomato Soup

* 3–4 lb tomatoes, chopped
* 1 red onion, cut into wedges
* 1 whole head garlic, top sliced off
* Generous amount of olive oil
* Salt + black pepper
* Dried herbs of choice
* 1 cup chicken broth
* 4 oz cream cheese, softened
* Splash of cream or milk
* Shredded cheese or Parmesan, to taste, optional
* Fresh basil, optional

Roast the tomatoes, onion, garlic, herbs, salt, pepper, and olive oil at 425°F for 30–40 minutes, until softened and lightly charred.

Squeeze the roasted garlic cloves from their skins, add everything to a pot with all those tomato juices, and blend until smooth. Add the chicken broth, softened cream cheese, a splash of cream or milk, and any extra cheese you want, then blend again until creamy.

For the grilled cheese: sourdough, mild cheddar, white American, and butter. Cook until golden and melty.

And little tomato tip: slightly soft or wrinkly tomatoes are GREAT for soup as long as they’re still good. 🍅

Creamy Pinot Parmesan Short Ribs 🤎🍷

If you know me personally and I’ve made this for you… yeah, you mean something to me lol.

This one is a two-day recipe, but around here we already know — good food’s worth the wait.

FOR THE SHORT RIBS
4–5 lb beef short ribs
Salt + black pepper
Garlic powder
Onion powder
2 shallots, thinly sliced
4 cloves garlic, minced
2 tbsp Worcestershire sauce
TRUFF hot sauce, to taste
2 cups beef broth
A few sprigs rosemary or thyme

PASTA + SAUCE
12 oz calamarata or rigatoni
3 tbsp butter
2 cloves garlic
½ cup Pinot Grigio
1 cup heavy cream
1–1½ cups grated Parmesan
Freshly cracked black pepper
2 tbsp short rib broth

HOW TO MAKE IT
Season the short ribs all over with salt, pepper, garlic powder and onion powder. Sear in a hot pan until deeply browned on all sides.

Cook the shallots in the drippings, then add the garlic. Transfer to the slow cooker with Worcestershire, TRUFF, broth and herbs. Nestle the ribs in and cook on LOW for 7–8 hours, until tender.

Chill everything overnight, then skim the solidified fat from the top. Reheat the ribs gently while you get your pasta going.

For the sauce, melt the butter and add the garlic. Pour in the Pinot Grigio and let it reduce, then stir in the heavy cream and Parmesan until smooth. Add freshly cracked black pepper and 2 tbsp short rib broth.

Toss the pasta in the sauce, top with the short ribs and spoon a little extra sauce over everything.

What’s the dish you make for someone you absolutely adore?

A birthday dinner for someone I miss.🤍

Happy birthday, Dad.
Grief is weird, but this helps.

✨ AIR FRYER CORNISH HENS✨

2 Cornish hens
½ cup (1 stick) unsalted butter, softened
4 cloves garlic, minced
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme, finely chopped
1 tsp paprika
1 tsp onion powder
1 tsp salt
½ tsp black pepper

Mix the softened butter with the garlic, herbs and spices. Work it underneath the skin and all over the outside of the hens. Add another layer of seasoning over the top — because we love flavor here. 😂

Air fry breast-side down at 375°F for 25 minutes. Flip breast-side up and continue cooking until golden and crispy and the thickest part reaches 165°F. Let rest for about 10 minutes before cutting or deboning.

🍠 Sweet potatoes: Toss with olive oil, salt, pepper + paprika. Air fry at 400°F for 18–22 minutes, shaking halfway.

🥦 Broccolini: Toss with olive oil, salt, pepper + garlic. Air fry at 375°F for 10–12 minutes, tossing halfway, until the stalks are tender and the tips are crispy.

Do you ever make a meal for someone you miss? ❤️

Sometimes I like to remind you guys that I’m just here for a silly goose time. And today, that involves digging up potatoes. 😂🥔

Did I make an entire fajita spread just to get too tired to actually assemble my own fajita? Yes. Was it worth it? Also yes. 😂🌶️🥩

CAST-IRON RIBEYE FAJITAS

🥩 For the ribeye:
1½ lb ribeye
1½ tsp Sazón Tropical
1 tsp Adobo
1 tsp cumin
½–1 tsp chili powder
½ tsp smoked paprika
Black pepper
1 tbsp oil

🌶️ For the fajitas:
1 red bell pepper
1 orange or yellow bell pepper
red onion
yellow onion
3 cloves garlic
Fresh lime
Flour tortillas

Season the ribeye on all sides. Get your cast iron nice and hot with a little oil and sear the steak for about 2–3 minutes per side for a nice red center like mine, adjusting the time depending on how you like your steak. Let it rest.

Add the peppers and onions right into those steak drippings and cook until soft with a little char around the edges. Add the garlic toward the end and finish with a little more Adobo.

Slice the rested ribeye thin against the grain, squeeze over some fresh lime, and serve with warm tortillas.

I served mine with Mexican rice, chili con queso, guac, sour cream & warm tortillas. 🌶️🥩

Would you try ribeye fajitas?

I guess it’s official… Cammie’s Kitchen is open! 🥹🍂✨

I’ve talked about sharing my recipes for what feels like forever, and after giving my little kitchen its makeover, I finally ran out of excuses 😂

So here we are — episode ONE!!

Starting her off strong with a cozy fall breakfast that got two very important little-boy stamps of approval. 🤎

Here’s to trying new recipes, sharing some old favorites, making a mess, and figuring it all out as I go.

Welcome to my kitchen, cuties. 🫶🏽🥐

The time has finally come… I know, the long-awaited Cammie’s Kitchen! 🍝✨

But before I share my what-could-be-Michelin-star recipes 😂 I needed the space I create in to feel comfortable and inspiring for me.

I painted the kitchen last year, but thanks to TikTok, I quickly realized I needed a backsplash. And as a girl on a budget, I thought this was BRILLIANT.

I found this particular Stickgoo style on Amazon!

Now that Cammie’s Kitchen officially feels like Cammie’s Kitchen… it’s time to cook. 👩🏼‍🍳✨

So… what should I make first?!
