Chocolate with a Groove — Cocoa Legato Chocolate is Back!

We’re excited to welcome Cocoa Legato back to the 18th Annual Northwest Chocolate Festival for their second year!

Based right here in Seattle, Cocoa Legato brings together two things we love: exceptional bean-to-bar chocolate and community. Their mission is rooted in ethically sourcing high-quality cacao, primarily from Colombia and Peru, while creating a welcoming home for Seattle’s vibrant independent music scene.

Founded by Colombian-born chocolate maker and musician Aaron Lindstrom, Cocoa Legato celebrates heritage through chocolate while giving local artists a platform to be heard. Each of their bars even comes with a music pairing highlighting Seattle-based female, q***r, and BIPOC artists.

We love seeing Seattle’s own craft chocolate community represented at the festival and can’t wait to have Cocoa Legato back for year two!

Meet Jose Visconti, one of the featured educators joining us at the Chocolate Experience Center!

Jose has worked in Peru’s cacao and chocolate industry since 2014, traveling throughout the country to regions known for their native specialty cacao. His experience includes working with and owning craft chocolate companies, as well as supporting international NGOs and cacao-growing communities across Peru.

Today, Jose and his wife are the founders of Cacao Adventures, a family-owned company specializing in origin-driven cacao and chocolate. They work directly with Indigenous communities and small family farms to source native wild strains and genetically distinct cacao varieties while supporting biodiversity, traditional growing practices, and the communities that steward them.
