June is an abundant time for Austin, gardening. This is today’s harvest of cucumbers, long beans, okra, and tomatoes. We’ve also harvested potatoes, onions, garlic, and southern peas recently.

Red Noodle beans, also known as asparagus beans, yard-long beans, or simply long beans are a prime example of a climate-adapted food crop for central Texas. A subspecies of southern peas (Vigna unguiculata ssp. sesquipedalis) popular in South Asia and southern China, they are a great alternative to green beans in the southeastern United States and similar growing zones.
