Slow Cooker Cheesy Pork Chops & Scalloped Potatoes
Ingredients
• 4–6 pork chops (bone-in or boneless, about 1-inch thick)
• 2 boxes (approx. 5 oz each) boxed scalloped potatoes (like Great Value)
• 2 cups milk (2% or whole, per package instructions)
• 4 tablespoons unsalted butter, sliced (per package instructions)
• 2 cups shredded sharp cheddar cheese
• 2 tablespoons olive oil (for searing)
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon smoked paprika
• 1 teaspoon salt
• ½ teaspoon black pepper
• Fresh parsley, chopped (for garnish)
Instructions
1. Pat the pork chops completely dry with paper towels. Season both sides generously with garlic powder, onion powder, smoked paprika, salt, and black pepper.
2. Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 2–3 minutes per side until deeply golden brown. (They do not need to be cooked through at this point). Set aside.
3. In a medium bowl, combine the dry potato slices and sauce packets from the boxes. Whisk in the milk and sliced butter until well mixed.
4. Pour half of the potato mixture into the bottom of the slow cooker. Layer the seared pork chops on top, then pour the remaining potato mixture over the chops.
5. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the pork chops are tender and the potatoes are soft.
6. During the final 20–30 minutes of cooking, sprinkle the shredded cheddar cheese evenly over the top. Cover and let it melt completely until bubbly and gooey.
7. For an extra golden, crispy top (like shown in the photo), transfer the slow cooker insert (if oven-safe) to a broiler for 2–3 minutes, watching closely to prevent burning.
8. Garnish generously with fresh chopped parsley and serve hot straight from the slow cooker.
