Rabbit Hole 6/12 - I received great praise for this plate up!! I should’ve photographed my first and fourth course, but I was just so excited about my mini German chocolate cakes that’s all I wanted to take pictures of haha 🤪

1st Course: Strawberry Mint Sherbet

2nd Course: “Henley Mess” whipped cream, pastry cream, crunchy meringue, blackberry coulis, and fresh blackberries

3rd Course: Miniature German Chocolate Cake

4th Course: Sweet tea gummy, sunflower seed praline, honey ginger hard candy

The cookie brigade for today’s events 🍪 my biggest cookie bake off yet!! (My favorite kind of busy day)

Today’s Cookie Cast;
- Brown butter triple chocolate chip
- Classic sugar
- Gingersnap
- Toffee chai white chocolate chip
- Strawberry Oreo
- S’mores
- M&M

Which would you grab first?? (I would go for the Oreo cookie, cookie on cookie)

Sweet charcuterie board for an event today in the hotel 🍓

Yesterday I hand dipped 200 strawberries with a variety of flavors (marbled, coconut, pecan, biscoff cookie, and of course classic chocolate) for these boards!

It comes with chocolate dipped strawberries, macaroons, sunflower seed pralines, chocolate covered espresso beans, truffles, candied orange peel, and (of course a TN staple) goo goo clusters and moon pies

Wedding Dessert (their theme was Farmer Wife lol and they asked us to use vegetables from their farm!) so for dessert I made them;

Carrot Pot de Creme
Fromage Blanc vanilla bean mousse
Sunflower seed praline candy
Toasted white chocolate
And a garnish of carrot top 🥕

My new menu is officially out!! The best part? I got to put my name on it proudly 💕

Henley Nashville is the first kitchen to really give me total freedom to create whatever I want. Chef Kristen is someone I look up to greatly and last night with the roll out of my new menu she looked at me and said,
“I’m proud of you.”

I haven’t felt so accomplished in a long time. My first big goal as a pastry chef has been achieved - my very own pastry menu ✅. My second big goal is to have a mentor chef to look up to - finally found one ✅.

Now to start my next phase of chefing, publicize a cook book. Get on tv. Maybe meet Gordon Ramsey?? Let’s see where this year takes me!
