Coffee Chat Q&A with Chef Tim!
Q: What's your favorite food/type of food to eat or make?
A: My favorite foods to eat is something that I did NOT make. I really enjoy making pastries, because it’s more challenging.
Q: Where does your inspiration for new dishes come from?
A: I draw a lot of inspiration from just walking around outside. I will regularly take walks around DTA just to clear my head, take in the surroundings and really embrace the season to create new dishes.
Q: How do you think food and music relate to each other?
A: They don’t. But I strongly feel that the journey is what matters more. It take 10’s of years to be good an learning an instrument, the same applies to cooking, honing your craft as a chef takes countless hours to get your accuracy, technique and palate to an acceptable level. When I hear chefs or cooks say they have been cooking for 5-7 years, that is a good start but nowhere near the end. It requires more discipline.
Q: Working in a kitchen seems stressful- how do you manage?
A: Yes, it is. I have kids now, so working is like my personal time! Hahahah. That being said, the kitchen is not that stressful in the scope of life.
Q: Who is Chef Tim when he isn't in a kitchen?
A: I’m just a regular guy. I like to hang with the family, friends, play poker, try to get a date night in with my wife (easier said than done).
