Cahors
Cahors are classified as church wine. Church wine appeared in Russia in the 17th century. Before that, mainly Moldovan wines were used, as well as from France and Spain. Production was established in the Crimea, and by the beginning of the 20th century there were 2 types of church wine in Russia - dry red and Cahors wine. The wine got its name from the French city of Cahors, where several varieties of red wines were produced.
Cahors are made from high-sugar grape varieties Cabernet, Saperavi, Morastel, with wilting on the bushes to obtain a higher sugar content. The wine is prepared using a special technology for the most complete extraction of all nutrients, aromatic substances from grapes. For this, the wort is heated to 65 degrees. Thanks to this, the wine has a harmonious, full, tart taste, dark ruby color and tart bouquet with hints of jam, chocolate, prunes. Wine has 16% sugar and 16-18% alcohol by volume. The little-known Beni Carlo also belongs to the wines of the Cahors type. This wine has more astringency than Cahors, rich color and pronounced shades of chocolate in the taste. "Black Doctor", "Bastardo Magarachsky", "Bastardo Massandra" are produced in Crimea. The most famous - "Black Doctor" - is made from the Ekim Kara variety, which grows in the Sun Valley of the Sudak region of Crimea.
