➖usion kitchen residency VIP Dinner :
The end of residency dinner marks the culmination of the African Kitchens Fusion Residency – Pilot Edition.
Over ten days in Tunis, two chefs from two African culinary traditions (Tunisia and Niger) worked side by side, exchanging techniques, ingredients, memories, and questions. Rather than seeking to blend cuisines superficially, the chefs engaged in a process of dialogue — allowing a shared menu to emerge organically from encounter and experimentation.
This dinner is not a showcase of finished answers, but an invitation to taste a process.
➖About the Menu:
The menu our guests experienced was a co-created work. Each dish reflects a conversation between two culinary identities — shaped by curiosity, respect, and innovation.
Ingredients, techniques, and narratives move between regions, histories, and personal practices, offering a contemporary expression of African cuisine as living and evolving.
