Most of you guys voted for this recipe. Amaretti cookies.
All you need are:
🔹200g almond flour mixed with 50g of sugar (I use raw unrefined cane sugar)
🔹2 egg whites at room temperature
🔹50g of sugar
🔹pinch of salt
🔹tsp of almond essence

1. Whisk egg whites with salt. Gradually add 50g of sugar whisking egg whites on high speed. You need to achieve hard peaks
2. Add almond essence (I bought mine from iherb)
3. Change you mixer attachment to paddle or just use spoon and mix egg whites mixture with almond flour and sugar.
4 With wet hands make walnut size balls and flatten them into cookies. Leave uncovered at the counter for 30 mins.
5. Meanwhile preheat oven till 160C
6. Bake for 20-25 min till golden colour.
