💭How full a coffee experience do *you* want?

We were having a conversation about iced coffee vs hot coffee with Mervin of .coffee

He expressed that the main difference between the two types of coffee (aside from temperature) is the fullness of the taste experience.

How I understand it is, how much of the coffee's taste evolution spectrum do you get to sit through?

With a cup of hot coffee, you go from hot to warm to cool. You experience more of the spectrum of the coffee's flavors.

In contrast, a cup of iced coffee is immediately drinkable but you get a narrower expression of flavor.

There's no right or wrong however.
And perhaps a good way to decide how you want your coffee (aside from the weather) is by how much capacity do YOU have today to appreciate and sit with a coffee.

A hot pourover will need more time to experience, whhereas you get straight to the point with an iced coffee.

So...in a way it's like, do you wanna watch the full YouTube documentary or a YouTube short?

Both are fun and entertaining. It's more about what do YOU have time for today?

Introducing empori's very own tea flavor wheel!

If you've been following our work, you'll know that we spent the latter half of 2020 and almost the whole of 2021 working on 茶wu語 (Identi-tea), an experimental tea experience exploring the relationship between our identities and our sense of taste.

A big part of the Identi-tea is about anthromorphizing tea flavors, so it became necessary for us to first be able to conceptualize and show what range of flavors tea have.
And if we talk about visualizing flavors, the first thing that comes to mind is naturally, a flavor wheel!

There are actually tons of flavor wheels out there.The coolest thing about flavor wheels is that it actually tells you a lot about the culture and upbringing of the person who made it. For example, the Australian Tea Masters Flavor Wheel which we referenced to make this has twice the number of floral note descriptors, which makes sense, flowers initimately woven into the fabric of peoples's everyday lives in the western world.

For our wheel, we too drew from our own upbringing to create this wheel. We went with what we think are flavors that would resonate with most asians who'd have grown up in a cosmopoilitan city.

We can go on forever about all the hidden intricacies behind a flavor wheel, so we'll just end here. If you're curious to learn more, you can find posts about the flavor wheel in our library.

Now that that's over and done with, we can finally shamelessly advertise: you can pick up a high-res pdf version of the flavor wheel from our newly opened e-shop (🔗 link in bio) and play around with it yourself! 😃

(PS: The two color palattes are called the Wabi Version (the muted one) and the Mochi Version (the brighter one). We called it Wabi & Mochi because wabi reimnds us of warabi and warabi mochi is happy food. =P)

我們的第一篇名副其實的「茶物語」.

不知為何,這款水仙不禁讓我們想到如懿傳裡的穎妃.

這款茶一開始喝的時候很甜. 但在茉莉花般的花香裡卻參雜著鮮草的清香和淡淡的煙燻味。而且尾韻雖然有微微的回甘,卻又特別的清爽乾淨. 我平常喝的都是些比較深焙的水仙,突然喝到這樣的水仙難免會覺得這茶很年輕.

可能因為這樣,這款茶整體的風味讓我想起穎妃初次出現的情節. 年輕的她機靈又惹人愛,但也帶這草原公主的那種奔和骨氣。

喝到第二泡時, 這款水仙的花香突然凋落,麥奶香變成為主味,而且還有點水. 茶裡參雜了茶渣/雜草的味道, 彷彿一名少女內心裡那一絲絲尚未成熟的擔心和雜念。雖然不至於不好喝, 但是總覺得好像原本的風味某種東西束縛住了. 而且含在嘴裡時,舌根兩側還有些微微酸澀。穎妃雖然在劇裡一直都很耿直,很直率,可是她在後續的情節裡也跟一開始不同,收斂了很多. 跟其她嬪妃聊天時也有淡淡的描述出自己的苦澀. 我還記得在評論裡看到有人說, 那麼多天真浪漫的少女在陰險的後宮裡被磨成這個樣子,真的好可惜.

由於這款水仙的第二泡那麼的有氣無力, 所以我對這款茶的第三泡也不抱什麼希望.

誰知,被打臉了. 渾厚的礁岩味和花香撲鼻而來. 雖然那風味跟深焙的水仙相比時淡淡柔柔的,但那風味無疑是標準的岩骨花香. 第二泡喝第三泡的對比給人感覺像是這個少女卯足了全力力做自己。但濃郁的風味給人的感覺那不像外顯的,而是勇敢。這樣的對比要我不聯想到穎妃霸氣謢女的場面都難.

最可愛的是,這第三泡的尾韻還是散了點, 雜了點. 就好比如一個小姑娘, 卯足了骨氣候卻不知道如何好好的退場似的. 著水仙到底還是個年輕的茶, 就好像穎妃到最後還是個散發著浪漫稚氣的角色.

(附帶分享一個小知識: 蒙古確實有花喔!蒙古的國花是翠雀花, 而這篇散文裡描述的花就是這種花.)

Our first every mandarin taste story is also the pride and joy of the taste story collection.

We really really love this story, both the process of writing and how it came out.
We credit the team at Lucid for putting together such a considered coffee experience that inspired this gem.
